美国密歇根大学的张建之和他的同事说，大熊猫有一种非活性的Tas1r1基因，这种基因能让我们感受到鲜味。
他们发现Tas1r1基因在大约420万年前停止了工作。化石记录显示，大熊猫的祖先大约在700万年至2百万年前"弃肉从竹"。研究团队怀疑大熊猫碰上了环境变化，它们的食物变得匮乏。大熊猫改变食物时，Tas1r1基因失去了功能，于是即使在肉类食物丰富时，大熊猫也不想吃肉了。
但可能还有个陷阱。时间判断上的误差使得很难判断何者在先：是先不吃肉，还是大熊猫先失去对肉味的感觉。
